:: Double boiled snow pear soup with white fungus and chinese almonds ::



This is a great natural sore throat remedy!

I was down with a bad sore throat and one of my girlfriends recommended me to try double boiled snow pear soup with chinese almond and dried red dates. The soup helps to soothe the throat. Great for those who is trying to avoid medication. 

So here's my first attempt and it turned out to be a dessert treat! I sure hope that my croaking voice will be better soon!


SERVES: 2 | PREP: 10 MINS | COOK: 20 MINS



Ingredients:

  • 1 large snow pear (雪梨) (300g), peeled and cored, cut to 4 pieces
  • 10g snow fungus (雪儿)
  • 1 tsp bitter almonds (北杏)
  • 1 tsp sweet almonds (南杏) 
  • 8 pitted red dates (红枣)
  • 300ml of boiled water
  • 1 tsp rock sugar (冰糖)

Method


1. Soak snow fungus in a bowl of water for 10 minutes, then discard the water. The white fungus should expand and become whiter. Cut the fungus to smaller pieces.
2. Place the white fungus, pear, red dates, bitter and sweet almonds and the rock sugar into a soup pot and add boiled water. Bring to a boil and simmer for 20 minutes.

SpicyTip: Above recipe is a vegetarian option. You could also try the meat option with lean pork rips.
