:: REALLY Awesome Red Velvet Cupcake ::

My cousin is heading to Birmingham in London for his studies this fall and I have specially baked him my REALLY Awesome Red Velvet Cupcakes. 

He loved it! He commented: "This has the best frosting ever! Gotta learn!" ;p 
By the way, he is a very good baker himself so this is such a compliment to me!


SERVES: 4-5 (18 cupcakes) | PREP: 60 MINS | COOK: 25 MINS



Ingredients: 

  • 180gm unsalted butter
  • 360gm fine sugar*
  • 2 Eggs
  • 1 tsp vanilla extract*
  • 1/2 tsp salt
  • 300gm cake flour*
  • 1 tsp baking soda*
  • 200ml buttermilk
  • 2 tsp coca powder
  • 60gm beetroot juice
  • 30gm coloring
  • *I used "Redman" brand for these items

  • Cheese Frosting:
  • 500gm cream cheese
  • 160gm Icing sugar
  • 160gm Unsalted butter
  • 2 tbsp lemon puree juice
  • *"825" piping metal

Method: 

1. Mix. Butter, sugar, vanilla and salt to cream.
2. Slowly add in egg and mix well.
3. Mix in the cake flour, baking soda and buttermilk. Mix well!
4. Mix in cocoa powder, beetroot juice and color to a paste
5. Mix well, scoop into baking cup.
6. Bake at 170C for 25 mins.
7. Take it out. Let it cool, pipe the cheese frosting on it.

Cheese frosting:
1. Put all into a bowl and mix to smooth texture.
2. Add lemon zest.
